Potatoes and Veggies!!

This delicious meal is definitely mixing things up in the kitchen!

Step 1. Take your pick of veggies (keep it colorful), chop up your potatoes AND veggies to liking. ! I chose:

red potatoes

red onions

green bell peppers

spinach

Step 2. Add light amount of olive oil to non-stick skillet. Cook potatoes until soft. Season with salt pinch of salt and pepper, add minced garlic. Cover the lid, turn fire to low.

Step3. Once potatoes are cooked to liking, add vegetables, season lightly (your choice of seasoning), cover lid. Cook for another 10-15 minutes. Add tomato sauce for light moisture, stir in your choice or meat.

Step 4. SERVE AND ENJOY!!
